Have you noticed that thanksgiving is intrinsically tied up in prayer?
(Phil 4:6) Be anxious for nothing, but in everything by prayer and supplication, with thanksgiving, let your requests be made known to God;
(Col 4:2) Continue earnestly in prayer, being vigilant in it with thanksgiving;
(1 Tim 2:1) Therefore I exhort first of all that supplications, prayers, intercessions, and giving of thanks be made for all men,
It’s even at the core of worship in heaven.
(Rev 7:11-12) All the angels stood around the throne and the elders and the four living creatures, and fell on their faces before the throne and worshiped God, saying: "Amen! Blessing and glory and wisdom, Thanksgiving and honor and power and might, Be to our God forever and ever. Amen."
I think it’s because we need the continual reminder of our dependence on God for everything. Otherwise we might get too clever and come up with something else to explain it all.
(Rom 1:20-22) For since the creation of the world His invisible attributes are clearly seen, being understood by the things that are made, even His eternal power and Godhead, so that they are without excuse, because, although they knew God, they did not glorify Him as God, nor were thankful, but became futile in their thoughts, and their foolish hearts were darkened. Professing to be wise, they became fools,
In fact, being unthankful is a sign of the last days.
(2 Tim 3:1-2) But know this, that in the last days perilous times will come: For men will be lovers of themselves, lovers of money, boasters, proud, blasphemers, disobedient to parents, unthankful, ...
